Raspberry and chia green tea lemonade
Enjoy this fruity raspberry and chia green tea lemonade. It’s so refreshing!
Ingredients:
2 ¼ cups cold water
3tbsp The Chia Co chia seeds
2 green tea bags
125g fresh raspberries
Juice of 2 lemons
2tbsp honey or agave nectar if vegan
Method:
Combine 1 cup of water with 3 tablespoons of chia seeds and set aside.
The seeds need 2 hours as a minimum to gel so do this in advance, the day before if possible.
Steep the green tea bags in 1 cup of boiling water for 2-3 minutes. Discard teabags and leave to cool.
To make the raspberry purée, combine the raspberries in a saucepan with ¼ cup water and bring to a simmer over a medium heat.
Mash the raspberries with a fork.
Sieve the raspberries, collecting as much juice as possible. Discard the raspberry pulp.
Combine raspberry juice, green tea, honey and chia gel in a large jug. Feel free to add more/less sweetener to taste.
Serve over ice. Enjoy!
