Sweet tooth? Chomp on this simple chia seed pudding recipe to satisfy those cravings and stay on track with your health goals. Chia seeds are amazing things. Two tablespoons of these little wonder seeds provide approximately 4g protein, 5g brain-boosting omega-3 fatty acids, 250mg calcium for strong bones, hair and nails, and 10g fibre for better digestion. If that’s not enough to convince you, these little gems also hold 9-12 times their weight in water, so they are both incredibly nutrient-rich and make you feel fuller for longer. If you’re new to transitioning away from refined sugars you may like to add a little maple syrup or Manuka honey to your milk for sweetness. Makes 1.

Ingredients

2tbsp chia seeds

125ml almond milk

Pinch of ground cinnamon

Grated dark chocolate and raspberries to decorate

Spoon the chia seeds and pinch of cinnamon into a glass of almond milk and stir. Leave to set (usually takes around an hour), stirring every now and again to ensure the seeds expand evenly.

Grate a little dark chocolate over your pudding, pop a raspberry on top and you’re done! Easy, right?
