Amaranth

Amaranth was a staple food of the Aztecs and an essential element of Aztec religious ceremonies. Amaranth is higher in minerals than most vegetables, consisting of high levels of calcium, iron, phosphorous and carotenoids.  It’s also a brilliant source of lysine, an amino acid with protein content along the same lines as milk, although it is far easier to digest. Amaranth has also been known to help prevent various health conditions such as diabetes, heart disease and cancer.
