Make your own milk
Having made a few attempts at creating fresh almond milk using cheesecloth to strain the soaked nuts, I quickly decided this wasn’t for me. I can handle the mess, but not the paltry 48-hour fridge life of the resulting produce, which meant I was forever milking nuts (yes, I know that sounds bad). I resigned myself to lugging home cartons of the shop-bought stuff and despairing at the amounts of additives most brands include (everything from synthetic vitamins to corn syrup). Until I discovered The Milk Maker from British company Hopps & Woolf, that is. This wondrous machine looks like a kettle and produces fresh nut or soya milk in 25 minutes. The process couldn’t be simpler: soak the nuts or soybeans for 24 hours (this is optional but recommended), then pop them in the machine together with water (filtered is best). Start the machine and let it heat, blend and pasteurise the nuts to slowly release the nutrients. Pour the mixture through the sieve (included) and there you have it – delicious mylk that will keep in the fridge for 5 days!
