Omelette breakfast bites recipe
If you’re looking for a new way to cook your morning eggs, then give this omelette breakfast bites recipe a whirl. The great thing about these bites is you can use whatever toppings you like – for example tomatoes, mushrooms or bacon – or you can make them veggie-friendly by skipping the ham and swapping it for potato, mushrooms or spinach. You can even spice them up with chorizo, sweet potato and chopped chilli and serve them for brunch. Don’t forget: you’ll need a muffin tin to make these.
Ingredients (makes 12 bites)
6 hash browns
2 slices ham
1 onion
½ red pepper
8 eggs
60ml skimmed milk
50g cheese (cheddar, mozzarella or feta)
Salt
Pepper
Dried, mixed herbs
Method
Cook the hash browns following the instructions. Once cooked, press half a hash brown in each greased muffin dish.
Dice other ingredients and put on top of the hash browns.
Whisk together the eggs and milk, then season with salt, pepper and mixed herbs.
Pour the egg mixture into each tin. Sprinkle each bite with the cheese.
Bake the bites at 180°C for 20 minutes, or until the egg is cooked through.
