A quick and crunchy vegetable stir fry recipe, perfect for a midweek dinner.
Serves 2
Ingredients:
1 cup of brown rice
2 peppers, thinly sliced
1 onion, chopped
2 garlic cloves, crushed
½ green cabbage, sliced
3tbsp hoisin sauce
3tbsp soy sauce
Packet of smoked tofu
Splash of lime
1tbsp coconut oil
1-2tbsp olive oil
Parsley, dried, to garnish
Method:
Cook the rice according to instructions. Slice the cabbage and steam.
Finely chop the peppers and melt the oil in a large frying pan. Fry the onions, peppers until soft, then add the crushed garlic.
In a separate pan, fry the chopped tofu in a little oil until golden.
Add the tofu, hoisin sauce, soy sauce, lime and cabbage to the large frying pan and allow to simmer for a few minutes.
Serve immediately on a bed of rice.
