Orange, lime and apricot overnight oats recipe

We know they’re good for us but if you want to mix up your breakfast oats try this Orange, lime and apricot overnight oats recipe from Harriet Emily.

Serves 3-4

Ingredients:

1 1/4 cup (130g) jumbo rolled oats
1 1/2 cup (325ml) milk of choice – I used rice
2 large oranges (425g)
1 lime
1/2 cup (100g) dried apricots

Method:

1. Zest one of the oranges and add the zest to a large bowl or mixing bowl. Next juice both oranges and the lime and add them to the bowl, followed by the milk and oats.

2. Roughly chop your apricots, then add them to the bowl and stir all of the ingredients together. Place the bowl in the fridge and leave overnight.

3. In the morning, remove the overnight oats from the fridge and stir (it may look slightly separated beforehand), then pour into bowls and serve.
