This creamy, spiced Peanut butter porridge with cinnamon recipe makes a warming, nutritious start to the day. Add a sprinkle of nuts and seeds for some extra essential fats and you have a brilliant breakfast that’ll see you through till lunchtime.
Peanut butter porridge
Ingredients (serves 2)
100g porridge oats
600ml oat milk
¼tsp cinnamon
½ vanilla pod
2tbsp Meridian smooth peanut butter
1tbsp pumpkin seeds
2tsp flaxseeds
2tsp Meridian date syrup
Method
In a saucepan combine the oats, oat milk, cinnamon and seeds scraped from the vanilla pod. Bring to the boil and gently simmer for six to eight minutes, stirring regularly until the oats are cooked and the porridge has thickened. If the porridge is too thick for your liking add some water or more milk.
Remove from the heat and stir in the Meridian peanut butter.
Divide between two bowls and top with the seeds and date syrup
Experiment with added fresh or dried fruit, yoghurt and seeds. If you prefer, use half milk and half water. And, pop the scraped vanilla pod into a jar of sugar to make vanilla sugar for baking cakes or biscuits.
