Speedy leek, potato and spinach soup

We’ve been struck down with a cold but this speedy leek, potato and spinach soup is literally giving us life right now! Even if you feel too poorly to leave the house, who doesn’t have some potatoes, leeks, onions and spinach at home.

This takes just 15 minutes to make, from chopping your ingredients till a steaming hot bowl of green goodness is in front of you, and we have tried and tested this recipe A LOT, so we promise it’ll make you feel better – that and the requisite hot toddy of course!

Serves 4 – which can be all for you!

Ingredients
1 leek, green part removed, sliced (about 150g)
1 onion, sliced
1-2 potatoes, peeled and chopped (about 275-300g)
6 frozen spinach balls (20g each – or 1 large bag of fresh)
1 stock cube in 1L boiling water
1/2tsp dried mixed herbs
Season to taste

Method
Sweat the onions and leeks in a little olive oil for 2-3 mins until turning translucent. Add the potatoes and sweat for a further 2-3 minutes.

Add the spinach, stock and herbs and bring to a boil. Reduce to a simmer for 8 minutes – until a knife easily pierces a piece of potato.

Blend the soup in batches until you reach the consistency you like. Season to taste.

You can add milk or crème fraîche if you fancy to add more creaminess, or leave as is for a vegan option.

Serve with a fresh chunk of bread of your choice.
