Mango chia pudding
Give dessert a fruity twist with this mango chia pudding recipe. You’re definitely going to have people wanting seconds!
Ingredients:
240ml alpro coconut milk
3tbsp The Chia Co chia seeds
1tbsp maple syrup (optional)
A ripe banana
1 ripe mango
Method:
Combine the coconut milk, chia seeds and maple syrup in a bowl.
Stir until combined, cover and then allow to sit refrigerated for a minimum of two hours.
Meanwhile, pure the mango and banana in a blender until smooth.
Once the chia pudding has thickened, layer it with mango purée in a glass jar.
Top with extra mango and serve immediately. Enjoy!
