It takes just 25 minutes to whip up, so is a perfect mid-week meal too.
Green Quinoa with Sesame Eggs recipe
Serves 2
Ingredients:
½ cup (100g) white quinoa, rinsed
1 cup (250g) chicken or vegetable stock
4 free-range eggs, at room temperature
2 teaspoons cold-pressed extra-virgin coconut oil
1 small clove garlic, crushed
1 small red chilli, sliced
2 cups (80g) thinly sliced kale (see Lorna’s Tip)
2 cups (90g) firmly packed thinly sliced silver beet (see Lorna’s Tip)
1 tablespoon lemon juice
¼ cup finely chopped flat-leaf parsley
1 tablespoon white sesame seeds
1 tablespoon black sesame seeds
1 teaspoon sea salt flakes
Method
Place quinoa and stock in a medium saucepan; bring to boil. Reduce heat to low-medium; simmer gently for 15 minutes or until most of the stock is absorbed. Remove from heat; cover and stand for 5 minutes.
Meanwhile, cook eggs in a small saucepan of boiling water for 5 minutes. Remove immediately from pan and cool under cold running water for 30 seconds; peel shells.
Heat coconut oil in a medium saucepan over medium heat. Add garlic and chilli; cook, stirring, for 2 minutes or until fragrant. Add kale and silver beet; stir until wilted. Stir in quinoa and juice. Season to taste.
Combine parsley, sesame seeds and salt in a small bowl. Roll peeled eggs in parsley mixture. Serve green quinoa topped with halved eggs. Sprinkle with micro red vein sorrel or extra parsley, if you like.

Lorna’s tip:
You will need half a bunch of kale and half a bunch of silver beet for this recipe; wash well before use.
