This easy chocolate muffins recipe contains just four ingredients and takes minutes to make. From chocolate muffin craving, to whole-muffin-in-mouth situ, is little over 20 minutes!
A lot of shop-bought muffins are often loaded with trans fats and refined sugar but these easy chocolate muffins have none of those nasties, instead contain just four natural ingredients: bananas, eggs, cocoa powder and dark chocolate. Not only do we always have all these ingredients at home but none of them will contribute to a sugar crash after devouring these muffins.
Make a batch or two – they keep for a day or two in an airtight container – and they freeze well too; just defrost when you want to eat one. Mmmmmm, warm easy chocolate muffins! Enjoy.

Makes 6
Preparation time: 5 minutes + cooling
Cooking time: 20 minutes
Ingredients
3 large very ripe bananas (about 450g peeled weight)
4 eggs, lightly beaten
4 tablespoons cocoa powder
20g dark chocolate, to decorate
Method
1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Line 6 holes of a muffin tin with paper cases.
2. Put the bananas, eggs and cocoa powder in a food processor or blender and blitz until completely smooth. Divide the mixture between the paper cases and bake for 15-20 minutes or until a skewer inserted in the centre of a muffin comes out clean.
3. Transfer to a wire rack to cool completely. Put the chocolate in a microwave-safe bowl and microwave on high for 30 seconds or until melted. Drizzle the melted chocolate over the muffins, then allow to set before serving.
