This carrot, halloumi and bulgur wheat salad with chilli dressing is simple to whip up and tastes delicious. The bulgur wheat and halloumi are packed with protein and by roasting the carrots, you really bring out their sweetness.
Combine the nutty bulgur wheat with sweet roasted carrots, salty halloumi and a spicy dressing in this carrot, halloumi and bulgur wheat salad with chilli dressing and you’ve got a crowd-pleasing starter, side dish or easy packed lunch.
Serves 2 as a main, 4 as a starter or side
Ingredients
8-10 carrots, quartered lengthways
200g bulgur wheat
1/2 vegetable stock cube
1 small red onion, finely sliced
1 x 250g pack halloumi, sliced into squares
1/2 avocado, diced
Dressing
2tbsp extra virgin olive oil
1 chilli, finely chopped – deseed it if you don’t like things too hot
1tbsp honey
Juice 1/2 lemon

Method
Preheat the oven to 200 degrees. Put the carrots into a roasting tray, add a little olive oil, season and then roast for 25-30 minutes until brown.Meanwhile cook the bulgur wheat according to packet instructions. Add half a stock cube to the water you use for cooking. Drain and set aside.
In a frying pan heat a little oil then add the red onion. Fry for 5-10 minutes, until just starting to brown. Remove from the pan and set aside. In the same heated pan, add the halloumi, cooking on both sides until golden brown.
Meanwhile combine all the dressing ingredients and set aside.
To serve, combine the roasted carrots, halloumi, bulgur wheat and avocado in a bowl. Add the dressing and serve while still warm.
