Brown rice pudding with fig compote

Alpro’s brown rice pudding with fig compote recipe works well as a dinner party pudding. It can be made in advance, and the zingy fig compote is sure to wow guests.

Preparation time: 45 minutes

Ingredients (serves 4)

750ml Alpro Almond Unsweetened

1 vanilla pod

200g brown rice

5tbsp date syrup

200g dried figs

1tsp cinnamon


4tbsp tahini

4tsp honey

40g toasted flaked almonds


Prepare the vanilla pod by splitting in two, scraping the seeds out using the tip of a knife.

Place the Alpro Almond Unsweetened, brown rice, date syrup, vanilla seeds and pod into a saucepan and bring to the boil.

Reduce to a low heat and simmer until all the liquid is absorbed.

Meanwhile, place the figs, cinnamon and water into a saucepan, bring to the boil, then reduce the heat and simmer for 30- 35 minutes until the figs are soft and sticky.

Spoon the rice pudding into bowls and top with the fig compote.

Decorate with a drizzle of tahini and honey and sprinkle with the toasted flaked almonds to serve.
