Mixed tomato and mozzerella salad

We love tomatoes! Try this delicious mixed tomato and mozzarella salad for a real burst of healthy flavours. The combo of different tomato varieties, fresh basil and creamy mozzarella is a really tasty option for lunch. It’ll bring sunshine to the table come rain or shine.

Mixed tomato and mozzarella salad
Serves 2 as a starter

250g Organic mixed tomatoes
150g mini mozzarella balls
Handful basil leaves
Glug of extra virgin olive oil
Balsamic glaze
Freshly ground black pepper

1. Wash the tomatoes, then halve or quarter them. Leave cherry tomatoes whole.

2. Drain the mozzarella balls. Combine the tomatoes and mozzarella balls on a plate. Tear the basil leaves and add to the salad.

3. Dress the salad with a glug of extra virgin olive oil, balsamic glaze and freshly ground black pepper.

We like to eat ours with homemade houmous and a slice of toasted rye bread. Nom.
