Easy gluten-free pancake recipe

 I discovered that banana can replace flour, who knew?

I made up this super-easy gluten-free pancake recipe this morning and it was soooo simple i made a Vine (check it out!) and just had to share my recipe with you!

After trawling the web I discovered that banana can replace flour, who knew? And went from there. So here it is a seriously easy gluten-free pancake recipe.

Makes 6-8 pancakes

Ingredients
2 organic eggs
11/2 or 1 large banana
Pinch baking powder
Pinch cinnamon (or ginger/nutmeg/allspice, whichever takes your fancy)

Coconut oil to fry

Whizz all the ingredients together in a blender or Nutribullet, if you have one. Combine till a batter-like consistency is reached (30 secs).

Heat the oil in a non-stick frying pan. Pour the mixture into the pre-heated pan. Wait for about 20-30 seconds, peep under the pancake to see if it’s browning, and if it is, flip! They’re tricky to turn so use your best spatula/flipper/lifter!

Cook as many as you want, then cover in berries. NOM.

You can save the rest for another brekkie if you’re the only one wanting pancakes this morning… as if!
