This chocolate olive oil tray bake has a unique flavour while ticking all those sweet treat boxes. Try it at a dinner party
Makes 12 slices
Ingredients:
1 tbsp flaxseeds + 2 tbsp water
150g apple
50g courgette
60ml water
205ml olive oil
180ml maple syrup
90g cocoa powder
50g brown rice flour
50g buckwheat flour
20g ground almonds
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
1 tsp apple cider vinegar
pinch salt
vanilla, to taste
Method:
Preheat the oven TO 225 C/ 437 F.
Firstly, mix the flax seeds and water together in a bowl, and then set aside to gel.
Next, core and chop your apple, and then add into a blender with the courgette and water. Blend until smooth. When this is done, pour it into a food processor, followed by the olive oil and maple syrup. Then, blend all of them together.
After this, pour in the flax mixture, cocoa powder, rice flour, buckwheat flour, ground almonds, bicarbonate of soda and apple cider vinegar. Add a pinch of salt and some vanilla to taste. Blend until smooth.
When the mixture is smooth, pour into a tray that’s about 8” x 8” and then place in the oven. Cook for 25-30 minutes, until the top has cracked and is fairly firm to touch. Then, remove from the heat and set aside to cool. When the cake has cooled, slice and serve.
