Peas, courgette, sweet potato and goat’s cheese
Ingredients
Handful of spiralised courgette
½ sweet potato, spiralized and roasted
handful of steamed fresh peas
50g (2 oz) goat’s cheese
Handful of fresh chives
Vegan alternative
Replace the goat’s cheese with 2 tbsp cooked black lentils, and the cream with oat cream
Cream
Blend together:
200ml warm single (light) cream
1tsp olive oil
Handful of fresh peas
Salt and black pepper
