Goat’s cheese and Pink Lady snack salad

Fresh and fruity, we love this goat’s cheese and Pink Lady snack salad.

Forget sad soggy leaves and shop-bought dressings. Want a salad? This goat’s cheese and Pink Lady® snack salad is a WHL fave!

Ingredients (serves 1):

1 Pink Lady® apple, cored and chopped

40g crumbled goat’s cheese

1tbsp sweetened dried cranberries

3tbsp fresh parsley leaves

2tbsp reduced fat French or vinaigrette-style dressing

Method:

Mix together the Pink Lady apple, goats cheese, cranberries and parsley leaves.

Dress with the vinaigrette and serve.
