Classic gazpacho recipe

Try this classic gazpacho recipe as a perfect summer starter, or healthy lunch option. As just because the weather is warm it doesn’t mean you can’t enjoy a bowl of soup. Just do as the Spanish do and simply eat it cold instead!

 

Ingredients

You’ll need a Vitamix (or similar blender) to make this recipe

720ml tomato juice, fresh or tinned

80ml red wine vinegar

60ml olive oil

2 large ripe tomatoes, chopped

1 cucumber, peeled, chopped

70g small onion, peeled, chopped

1 green pepper, seeded, chopped

Dash of hot sauce (optional)

Salt and pepper, to taste

 

Method

Place all ingredients into the Vitamix container in the order listed and secure lid.

Select Variable 1. Turn machine on and slowly increase speed to Variable 5.

Blend for 30-45 seconds. Stop machine, season soup and serve immediately
