Wholegrain spelt pancake recipe

We’re big pancake lovers at WHL and this wholegrain spelt pancake recipe is up there with the best of them. Plus, you can up the protein count easily, making them a perfect post-workout brekkie.

Ingredients:

2½ cup spelt flour, or MaxiNutrition Promax Lean, flavour of your choice
2tsp baking powder
½ tsp Maldon salt
1-2tsp cinnamon
1 ½ cup skimmed milk/milk alternatives
2tbsp honey
Coconut (or preferred) oil for frying
1 banana (optional) – mashed or sliced
1tsp vanilla extract (optional)
1 pinch nutmeg (optional)
Extra honey or maple syrup to drizzle on top
Mixed berries, seeds and or nuts of choice – to top
Greek yoghurt (optional) – to top

Sift all the dry ingredients together. You may find that if you are using wholegrain spelt that there will be a collection of courser grains at the bottom of the sieve. Just pop them in to the mix too – they are full of wholegrain goodness.

In a smaller bowl, mix all the wet ingredients apart from the milk and whisk lightly until frothy.

Make a well in the centre of the dry mix and add the wet ingredients apart from the milk. Roughly mix.

Now gradually add the milk until you achieve your desired consistency. More milk for thinner pancakes, less for thicker.

Heat a non stick frying pan to medium heat.

Using a paper towel rub oil onto the pan or spray the oil; Using too much oil will cause uneven cooking – as well as being unnecessary!

Add approximately half a ladle / two tablespoons of the pancake mixture to the hot pan. When the pancakes begin to bubble, turn them over using a fish slice and cook until golden brown.

Use oil between each batch – remember that if you use a non stick frying pan, you will almost certainly need less oil.

You can make these in advance and reheat in the oven / microwave before serving.

TIPS

It is very easy to make these protein pancakes, simply add protein powder to this recipe. Simply substitute 1/2 cup of spelt flour for protein powder of your choice. This can be MaxiNutrition’s Promax, Promax Lean or Cyclone products. You may also want to eliminate the honey as protein powder is often sweet enough.

Or for a coarser pancake, why not swap half a cup of spelt for rolled oats? Great for breakfast on the go.

You can add mashed or sliced banana – I use approximately one large banana per mix – to make banana pancakes. Likewise do the same with blueberries, raspberries etc.
