Jazz up mealtimes with this warm prawn and mango salad. It’s packed full of health-enhancing, vitamin-packed foods like chilli, coriander and of course mango, which will help you fend off winter colds and illnesses. Plus, it tastes like sunshine in a bowl – transporting you to faraway shores, even if it’s below freezing outside.
Ingredients (serves 4)
300g shelled and de-veined king prawns
1 large ripe mango
100g rocket leaves
1 red chilli, de-seeded and finely sliced
Juice of 1 lime
Small bunch of coriander, finely chopped
Splash of oil
Salt and pepper

Method
Heat a large frying pan and add the oil. Add the sliced chilli and cook for one minute. Add the prawns and cook for one minute on each side. Chop the mango into slices. Add the mango to the prawns and cook for a further minute, then remove pan from the heat. Add rocket and coriander to the pan, tossing to mix. The residual heat of the pan will be enough to wilt the greens in approximately one minute. Squeeze over lime juice and season with salt and pepper. Mix with a good amount of Baxters Deli Toppers Spicy Slaw. Garnish with fresh, finely sliced red chillies or try the Baxters Deli Toppers Jalapeños.
