Turmeric and ginger milk chia pudding

Rich in antioxidants and nutrients, the chia seeds used in this turmeric and ginger milk chia pudding were a dietary staple in Mayan and Aztec cooking for centuries, and they make a brilliant and healthy addition to loads of different puddings. Turmeric and ginger also have so many incredible health properties. Using them dried is great, but if you’re able to use the fresh root then even better.

 

Ingredients

1 pear

Chunk of ginger

Chunk of turmeric root

100ml almond milk

1tsp honey

3tbsp chia seeds

Half an avocado

1tbsp cacao powder

1tbsp honey

Drop of almond milk

2 dried, pitted dates

 

Method

Run the pear, turmeric and ginger roots through a juicer to extract the liquid. Add the liquid to a bowl of milk and stir in the honey and chia seeds.

Leave the chia seeds to absorb the liquid, expand and set. Place in the fridge until needed.

Blitz the avocado, dates, cacao and honey together to create a chocolate cream. Depending on how ripe the avocado is, you may need to add a drop of almond milk to blend smoothly.

Spoon the set chia pudding into a glass or jar, add some fresh raspberries and serve with the chocolate cream.
