Three-bean salad with quail’s eggs

This wheat-free, gluten-free and dairy free salad is absolutely delicious and packs a really good hit of protein with all those beans. Taken from The Balance Diet by Pure Package’s Jennifer Irvine.

Ingredients
150g baby potatoes, scrubbed and halved
140g fine green beans, topped and tailed
(have a bowl of iced water at the ready)
6 fresh quail’s eggs
2 tablespoons lemon juice
½ green chilli, deseeded and
finely chopped
1 spring onion, finely chopped
1 tablespoon cold water
2 spring onions, finely chopped
100g tin cannellini beans, drained and rinsed
100g tin butter beans, drained and rinsed
Small handful fresh chives, finely chopped
Small handful fresh parsley, finely chopped
Small handful fresh mint, finely chopped

What to do
Place the potatoes in a pan of boiling water and simmer until cooked through – about 10 minutes. Drain and leave to cool by running under cold water. Bring a separate pan of water to the boil and blanch the green beans: plunge then into the boiling water for 90 seconds, then remove from the pan with a slotted spoon and dunk into a bowl of iced water. Drain and place in a large salad bowl. Carefully place the quail’s eggs in the pan of hot water that you used to cook the beans, and leave to simmer for 2 minutes.

Remove and place in a bowl of cold water for a few moments. Then peel them and cut in half. Set aside. Meanwhile, make the dressing. Mix the lemon juice, green chilli, spring onion and water. Set aside. Add the spring onions, cannellini beans, butter beans, chives, parsley and mint to the bowl containing the green beans. Stir well. Toss with the baby potatoes and the dressing. Divide the watercress leaves between serving plates, top with the dressed potatoes and beans, then scatter over the
quail’s eggs.

Tip:
The miniature size of quail’s eggs complements the beans perfectly, but you can easily use two hardboiled hen’s eggs instead and serve them quartered.
