Coffee and cacao truffles

Last minute dinner party invite? Whip up a dessert that everyone will love – and one that will keep the healthy eaters happy – with these coffee and cacao truffles, courtesy of Pollen + Grace

Ingredients (makes 12)

2 cups dates

4tbsp raw cacao

zest of 1 lemon

1 double espresso

3tbsp raw cacao, for rolling


Add all the ingredients to a food processor and mix until smooth.

Chill the mixture for a couple of hours to make it easier to roll.

Roll the mixture into Easter egg shaped balls (it will be very sticky, but this is what makes them so yummy) then roll in raw cacao.

Roll, then coat again to get a neater shape.

Chill the balls for a couple of hours (or 1 hour in the freezer) to firm up before serving.
