Sweet potato protein pancakes recipe

Protein pancakes don’t get better than this sweet potato protein pancakes recipe. These are gluten-free and packed with vitamin A, vitamin C, B vitamins, niacin, fibre, and protein. And here are the macros too, if you’re keeping tabs on that: 266kcal, 29g protein, 33g carbs, 1g fat.

Add your filling of choice then serve these up for breakfast, brunch or lunch, or with something sweet, like bananas and cinnamon, as a dessert.

Ingredients

28g Pow Whey Mix

132g liquid egg whites (we used Two Chicks)

1 small sweet potato, baked until soft and chopped up

Method

Blend everything together.

Fry up the mixture on a very hot nonstick pan using some low-calorie spray or coconut oil.

Turn the heat down to medium and flip when bubbles start to appear on the pancakes’ surface.

Serve up with your topping of choice!
