We’re loving these delicious sweet chilli tofu rice cups! They’re super easy to make and are the perfect light lunch or speedy snack. We love a little sweet chilli, so it wins on the flavour front, too and the veggies help you on your way to hitting that 5-a-day.

Cooking: 12 minutes
Ingredients (serves 2)
160g Oriental Tofoo
1tbsp sesame oil
2tbsp sweet chilli sauce
250g pouch rice
1 carrot, peeled and grated
6 radishes, thinly sliced
1 little gem lettuce, divided into leaves
1tsp sesame seeds
Method
Cut each Tofoo cube into 4. Stir fry them in the sesame oil for 2 minutes, add the sweet chilli sauce and cook for a further 5 minutes until sticky.
Remove from the heat and stir in the rice, carrot and sliced radish. Cook for a further 5 minutes, stirring.
Divide between the little gem leaves and sprinkle with a few sesame seeds.
