Superfood skin-boosting breakfast recipe

We love this superfood skin-boosting breakfast. The one thing that makes us reach for the cereal rather than preparing something a bit more nutritious is time, but the brilliant thing about this breakfast is that it can all be made in one easy dish. Then it’s simply a case of popping it in the oven for 15 minutes, while you go off and do your make-up. This skin-boosting combination contains three superfoods and an absolute ton of vitamins and nutrients.

 

Ingredients

(serves 1)
1 avocado

 

2 eggs

 

4-6 mushrooms

 

4 chopped spring onions

 

A handful of chopped thyme

 

Salt and pepper

 

 

Method

 

Slice the avocado in half, remove the stone and use a teaspoon to gently scoop away a little more avocado, making enough room for the egg.

 

Gently crack the egg, ensuring the yolk stays whole. Spoon the yolk into the avocado and add enough egg white to fill the hole.

Repeat with the second egg and avocado half.

 

Carefully place the filled avocado halves into an overproof dish, adding the mushrooms, spring onions, thyme and seasoning.

 

Bake in the oven for 15-20 minutes at 200°C, until the eggs are white and obviously baked.

 

Serve with a spoonful of wholegrain mustard.
