This super-healthy superfood energy balls recipe is just one of many created by Harriet Emily Smith and Louise Houghton for their new TV show Inspired Foodie Passionistas, coming soon to VIVE Lifestyle network. Makes 15 large portions.
Ingredients:
55g almonds
250g dates
55g goji berries
45g shelled hemp seeds
180g smooth almond butter
1tbsp spirulina
1tsp cinnamon
½tsp vanilla extract
Optional: desiccated coconut to roll in for decoration
Firstly, add the almonds, cinnamon and spirulina into your food processor and blitz for 10 seconds until the almonds are roughly chopped.
Then add in the dates, goji berries, almond butter, hemp seeds and vanilla into the processor. Blend for a few minutes, stopping occasionally and scraping down the sides of your processor, until the nuts and other ingredients have broken down and formed a sticky crumb.
When this is done, take a handful of the mixture and press into a ball shape. Then, repeat until all of the mixture has been used up. To decorate, finish by pouring some desiccated coconut on to a plate, and rolling each one into the coconut to cover. Then serve.
