Just because it’s the festive season it doesn’t mean your healthy eating plan has to go out of the window. Just take these delicious, sugar-free mince pies for instance; they taste of Christmassy goodness but with a fraction of the calories.
For the casing
70g almond flour
15g melted Lucy Bee Coconut Oil
1 whole egg
1tsp almond milk
For the mincemeat filling
Peel of 1 orange and 1 lemon
1tsp cinnamon
1tsp ground nutmeg
½tsp ground ginger
2tbsp zero-calorie sweetener (optional for extra sweetness)
1 whole, finely-diced, skinless apple
1tbsp sultanas
1tbsp raisins
1tbsp dried cranberries
1tbsp finely-chopped dried apricots
Juice of half a lemon
4tbsp Muscle Food Guilt-Free Syrup
Method
Preheat your oven to 180°C.
Combine all the ingredients in a bowl until a dough is formed.
Divide the mixture into nine equal balls.
Using a miniature pastry case baking tray (you can make do with a mini cupcake tray) grease with a little coconut oil.
Press the balls into the cases and form into tart shapes.
If you’re using a cupcake tray, use a fork to indent the top sides of the case all the way around to make the mince pie pattern.
Bake for 10 minutes. Remove from oven and leave to cool.
Combine all the mincemeat ingredients in a bowl until a sticky mixture is formed.
Spoon in your minced meat mixture and dust the top with some Sukrin sugar-free icing sugar.
