Spicy bean burger recipe

There are so many ways you can make an exciting, delicious meat-free burger, I love this spicy bean burger and sweet potato fries recipe.

These burgers are full of flavour and make an easy yet filling meal, perfect for a post-gym chow-down! I hope you enjoy these and fall in love with them as much as I did!

Serves 2

Ingredients:

For the burgers

1/2 red onion, chopped

1/2 chilli, deseeded and chopped

1tsp cayenne pepper

1tsp paprika

1tsp garlic puree

2tsp tomato puree

3/4 cup drained kidney beans

1tbsp lime juice

1tbsp plain soya yoghurt

2tbsp flax seeds

1tbsp millet flour

For the fries:

1 large sweet potato

Drizzle oil

1tsp paprika

1tsp cajun spice

Pinch of salt and pepper

Extras: salad, rolls or whatever else you like, to serve

Method:

Peel your sweet potato, and chop into long chunks.

Drizzle a baking tray with some oil, and top with the potatoes. Sprinkle the spices on top and season with salt and pepper. Shake the tray, and turn the potatoes so that they are evenly covered.

Move to a preheated oven and bake for about 20 minutes, or until crisp and slightly browned.

In the meantime make the burgers. Drizzle some oil into a frying pan, and add in the onion and chilli. Fry for 2-3 minutes to allow them to soften. After this, add in the cayenne, paprika and garlic and fry for another minute. Set aside to cool slightly.

Pour the kidney beans into a food processor and add in the tomato puree, lime juice, yoghurt, flax seeds and millet. Then pour in the fried onion mixture.

Check the sweet potato fries in the oven and remove. Shake and turn the tray so that the fries are evenly cooked. Then put back in the oven so they can continue to cook as you finish the burgers.

Blitz the burger mix until a moist patty has formed that has stuck well together, almost like a wet ball of dough. The flax seeds are what make these burgers stick so well together!

Drizzle a pan with oil, and warm to a medium-high heat. Scoop the burger mixture into two and press into individual burgers. Fry the burgers for about 3-5 minutes on each side.

When the fries have cooked, remove from the oven and move onto plates to serve. Garnish the plates with salad, or rolls, and when the burgers have cooked, place them on top. If you like, serve these with a salsa or sauce for extra flavour. Enjoy!
