Spiced tofu bhajis with mint raita

A great addition to any meal, we love these spiced tofu bhajis with mint raita.

A great starter or snack, these spiced tofu bhajis with mint raita are a fabulous addition to any dinner table. Packed with flavour and teamed with a tasty dip, we’re sold!

Preparation: 15 minutes

Cooking: 5 minutes

Ingredients (serves 2)

160g Indian Tofoo

1 onion, peeled and thinly sliced

½tsp cumin seeds

½tsp ground coriander

1 green chilli, deseeded and finely chopped

1 egg, beaten

50g gram flour

Oil for frying

For the dip:

150ml natural yogurt

1tbsp mint jelly

5cm piece cucumber finely diced

1tbsp fresh mint leaves, chopped

To serve:

Lemon wedges

Method

Place the Tofoo, onion, cumin seeds, coriander and chilli in a food processor and blitz, add the egg and flour and blitz again to bring mixture together.

Heat oil to 190C, drop spoonfuls of the mixture into the hot oil and cook for 1 to 2 minutes until golden and crispy. Drain onto absorbent kitchen paper.

Mix together the yogurt, mint jelly cucumber and mint leaves and serve with the bhajis for dipping.
