Need a quick breakfast idea? Try this speedy granola parfait recipe, created by Gizzi Erskine for Arla Foods.
‘Breakfast is at its best when you’ve included some element of dairy, fruit or veg and wholegrain all in one go,’ says Gizzi. ‘For example, in my fridge you will always find snack pot-sized yoghurts – sometimes time really does run away from me and I find it reassuring to know I have a healthy back-up for those mornings. Just top with some mixed fruits, seeds and a sprinkling of granola and you have a quick, easy, fuss-free breakfast that you can grab on the go.’

Ingredients (serves 2)
300g Skyr yoghurt
1tbsp seedy vanilla extract
2tbsp honey or maple syrup
4tbsp mixed berries
4tbsp of really good quality, refined, sugar-free granola
Method
In a mixing bowl fuse the yoghurt with the vanilla. Split the yoghurt between two tumblers and top with the honey or maple syrup, then the berries and the granola.
Serve straight away with a spoon.
