Slow cooker vegetable risotto recipe

If you’ve got a slow cooker, you’ll love this vegetable risotto recipe.
Serves 6

Ingredients:

1 cup of short grain rice (white or brown)

1 can coconut milk (full-fat or light)

1½ cups vegetable stock

Handful of grated Cheddar cheese and Parmesan

Method:

Add rice, milk and stock into a slow cooker. Stir/mix well and turn on ‘high’ for two hours. If possible stir every 30 minutes.

 

Serve with sliced cold meats or sausage, and green salad.
