Those leisurely mornings – when you just don’t bother to set the alarm clock – call for a luxurious breakfast like this scrambled eggs with smoked salmon bagels recipe. This indulgent, protein-packed treat will boost your energy levels and keep you feeling full until late afternoon.
Ingredients (serves 2)
Knob of butter, plus extra for spreading on the bagels
4 eggs
3tbsp milk
3tbsp Rachel’s Greek Style Natural Low Fat Yogurt
120g smoked salmon
Salt
Pepper
2 bagels
Chopped chives (optional)
Method
Lightly whisk the eggs with the milk and the yoghurt. In a shallow frying pan, heat the butter until melted but don’t allow it to burn.
Pour in the egg and yoghurt mixture and let it sit without stirring for 10 seconds. Using a spatula or wooden spoon, lift and fold the eggs. Continue to repeat this until the eggs are set and then season the dish.
Serve immediately with smoked salmon on toasted, buttered bagels.
