‘Cookies made with tea’ we hear you cry. Well don’t judge them until you’ve tried them. The South African, caffeine-free Rooibos tea adds an unexpected caramel-like flavour that makes these healthy biscuits taste delicious. Perfect with your afternoon cuppa.
Ingredients
1½tsp Bloom Teas CHILLOUT Rooibos
¼ cup almond butter
¾ cup oat flour
4tbsp coconut sugar (or any type of sugar)
Small handful choc chips or cacao nibs
¼ cup coconut water
Method
Pre-heat the oven at 180°C.
Combine almond butter and oat flour, rubbing together like you would when making pastry.
Add in coconut sugar and Chillout Rooibos tea, which adds a really nice caramel flavour.
Stir in a small handful of chocolate chips or one tablespoon of cacao nibs and combine well.
Finally add in coconut water and combine to form a dough (you may need a bit more water if the mixture is too dry).
Roll out and cut into cookies and put on a baking tray. Bake in a pre-heated oven at 180°C for 10-15 minutes – until golden. Leave to cool and enjoy.
