A real sweet treat that will tickle your tastebuds, this rocky road ice cream recipe is perfect for any special occasion!
2tbsp Dr Gayes Super Blend
1/2 cup soaked cashew nuts in ¼ pint water
2 chopped frozen bananas
2tbsp coconut oil
1tbsp chopped walnuts
1tbsp chopped dates or sultanas
1tbsp cacao nibs
2tsp vanilla essence
1/4tsp cinnamon
Pinch of sea salt
Cut banana in slices and freeze.
Place cashews and water, Dr Gayes Super-Blend, coconut oil, vanilla, cinnamon and salt in a blender or food processor with the S-blade. Pulse ingredients together and blend until creamy. Put to one side in dish.
Blend frozen banana and then add pre-mixed mixture above and pulse to mix well. Add remaining ingredients (walnuts, dates/sultanas, cocao nibs) and pulse just a couple of times.
Transfer to a container and put in freezer for two hours. Serve. Indulge. Enjoy!*
