Quinoa and raisin flapjack recipe

After a tasty pre-gym energy boost, try this quinoa and raisin flapjack recipe.
Using both quinoa flakes and oats this is a deliciously crunchy, soft and sweet flapjack.
Ingredients
Serves 6-8
225g butter
225g demerara sugar
75g golden syrup
200g oats*
75g quinoa flakes
30g raisins
*gluten-free if required
Method
Preheat the oven to 160 degrees. Grease (and line if desired) a roasting tin 30x23cm.
Melt the butter in a large bowl over boiling water with the sugar and syrup. Then stir in the oats and quinoa. Combine well.
Turn into the tin and flatten the mixture using a spoon.
Cook for 35 minutes or until it’s a pale golden brown.
Allow to cool in tray for at least 10 minutes before marking into roughly 24 squares. Finish off cooling in the tin.
