Quinoa jacket potato recipe

If you want to give your regular meals a healthy makeover try this quinoa ‘jacket potato’ recipe, from Sally’s Baking Addiction.

Quinoa is one of the most versatile ingredients out there, and can turn some of your fave classic dishes into a healthy treat – plus they’re all gluten free! I love it!

Try swapping your classic baked potato with cheese and beans for quinoa.  A great recipe for a quick warm lunch on an autumn day.

Quinoa ‘jacket potato’ 

Serves 2

Ingredients

1 onion finely chopped

1/2 can of mixed beans

25g cheese grated

50g quinoa

2-3tbsp Worcestershire sauce

Method

Rinse quinoa. Boil 100m of water. Add quinoa and cook for 6 minutes. Cover the pan with a lid and leave for a further 6 minutes. Fluff with a fork then allow to cool.

Fry onion until soft.

Drain beans and add to onions.

Add Worcestershire sauce.

Take pan off the heat and transfer to a bowl.

Serve with a sprinkle of cheese.
