Noodle dishes make great dinners if you’re dining solo – and this quick king prawn noodles recipe is no exception, delivering on punchy flavour, healthy, nutritious ingredients and super-speedy cooking time. We’ve got oodles of love for this tasty bowl of goodness!
Ingredients
(serves 1)
5 king prawns
1 head of broccoli
5 spring onions
5 shiitake mushrooms
2 cloves of garlic
1 green chilli
Half a tin of coconut milk
Half a lime
Chunk of ginger
Handful of fresh coriander
1 serving of soba noodles
1tbsp coconut oil
1tsp ground coriander
Tamari (gluten-free soy sauce)
Method
Chop the spring onions, garlic, chilli and ginger and fry in a large pan with a little coconut oil.
Add half a tin of coconut milk, the ground coriander and squeeze in some fresh lime juice.
Add the broccoli, king prawns and mushrooms and cook through for around 10 minutes.
Meanwhile, boil a pan of water and add the soba noodles. Take off the heat and allow noodles to soften over 5-10 minutes.
Add the noodles to the coconut stir fry and mix well. Season with a few drops of tamari and fresh lime juice.
Serve with a handful of fresh coriander.
