Try this pulled pork street burrito recipe, which will give you that takeaway feel, but the fact it’s homecooked means you know exactly what’s going into it. It’s packed full of spices that are not only delicious, but also great for your health. One of these is black pepper – a surprisingly impressive powerhouse of nutrients such as vitamins C and K, manganese and potassium, iron.
Ingredients (serves 8)
For the meat:
2kg pork shoulder
300ml pork stock
Dry ingredients for the rub:
1tbsp chilli powder
1tbsp mustard powder
1tbsp paprika
1tbsp black pepper
1tbsp sugar
For the BBQ sauce:
300g ketchup
100g brown sugar
Juice of 1 lime
2tbsp English mustard
1tbsp cider vinegar
200g chipotle chilli in adobo sauce (40g chipotle chilli flakes or 4tbsp chipotle paste are a good alternative)
50g coriander
3tsp finely chopped Baxters Deli Toppers Jalapeños
To serve:
8 white flour tortilla wraps
Green salad

Method
Mix all dry ingredients for the rub in a bowl. Rub all over the pork. In a small saucepan, heat all the ingredients for the BBQ sauce together until sugar has dissolved – stirring regularly. Place the pork in a deep ovenproof tray. Mix the pork stock with half the BBQ sauce and pour into the tray. Cover with foil and cook at 150°C for three to four hours. To finish, cover with the rest of the BBQ sauce mixture and place on the BBQ or grill. Keep turning for approximately five minutes until the pork has a nice sticky glaze. Shred pork using two forks to pull it apart. Serve in white wraps and finish with salad and plenty of spicy Baxters Deli Toppers Jalapeños.
