Polenta is a fantastic fibre-filled grain that makes a great gluten-free alternative to rice or pasta. It’s often used in Italian cooking and is made by grinding corn into meal or flour. It’s a really versatile ingredient that can be cooked to a creamy consistency or left to set for something a bit firmer.
Polenta has a bit of a bad rep as many people think it’s bland and boring – which it can be if you don’t use your imagination. But add a little flavour – some fruit, some spice or some flavoursome veggies – and it makes for a filling meal any time of day.
