Pistachio and quinoa bites

Need a quick and easy snack? Try these pistachio and quinoa bites. Not only do they taste great, they’re also gluten-free, low in saturated fat and high fibre too, making them total snacking perfection.

Ingredients (makes 12)

60g quinoa, rinsed
100g shelled pistachio, chopped
200g pitted prunes
2tbsp honey
100g cacao nibs or chocolate chips

Method

Preheat the oven to 180°C /160°C fan/Gas 4.

Spread the quinoa and pistachio nuts on a baking tray and place in the oven at 180°C for 10 minutes. Reduce the oven to 160°C/140°C fan/gas 3. Allow the nuts and quinoa to cool.

Place the prunes, honey and three tablespoons of water in a blender and puree. Spoon the prune mixture into a large bowl and mix with the quinoa, pistachios and cacao nibs.

Line a 20cm-square tin with greaseproof paper, spoon the mixture into the prepared tin and bake for 20 minutes.

Allow to cool in the tin for 15 minutes then cut into 12 slices.
