DAY 3

Upon rising: Hot water and lemon

Breakfast: Hydration helper smoothie

Blend 250ml coconut water with a handful of the following: strawberries, raspberries and spinach. Add some grated ginger, 1 tbsp chia seeds or mixed seeds and half a lemon squeezed.

Snack: 1 raw red pepper cut into sticks served with 1 tbsp guacamole.

Lunch: Spinach and mushroom omelette with salad

Sautee a handful of spinach and 3 sliced chestnut mushrooms in a saucepan. Ladle in 2 beaten eggs and cook. Serve with a green side salad.

Snack: 1 plum and 2 tbsp almonds

Dinner: Parsley cod parcel with green vegetables

In a bowl mix together 1 tbsp low fat yogurt, 1 tsp mustard, a squeeze of lemon and chopped parsley. Place a cod fillet on a piece of foil and spoon over the yogurt marinade. Cook in the oven and serve with 5 steamed asparagus spears, a handful of steamed kale and 4 grilled cherry tomatoes.
