Indulge your sweet tooth in style with this pecan meringues recipe, which was created by Atkins. Not only do pecans taste great, they’re also packed with nutritional benefits. They’re a source of monounsaturated fatty acids – like oleic acid – and will also give a great antioxidant boost. Plus, they’re packed with vitamin E and various B vitamins, making them a total must-have in your diet.
Ingredients (serves 8)
15 pecan halves
4tsp Splenda
3 egg whites
1tsp cream of tartar
Method
Preheat the oven to 130°C and line a baking sheet with parchment paper. Chop the pecans finely and mix with the Splenda in a food processor.
Beat the egg whites until they gain volume, then gradually add sugar and the cream of tartar until egg whites hold firm peaks. Sprinkle the nut mixture over the egg whites and fold in.
Spoon into eight small mounds on the baking sheet and bake for between one hour and 15 minutes to one hour and 30 minutes – until the meringues have browned. Leave to cool and serve.
