Pear and parsnip green juice

This might sound like a bizarre, unpalatable concoction, but actually this juice tastes amazing. And of course it delivers big-time on the health benefits.

Juicing is a great way to use up unwanted vegetables and the ones in this recipe should be in season at the moment – meaning they’ll be more readily available and cheaper too.

Ingredients (serves 1)

2 pears

1 parsnip

2 Brussels sprouts

Half a cucumber

Handful of spinach leaves

Chunk of ginger

Method

Wash everything well and then run through the juicer. Add ice to serve.
