Passion fruit and coconut parfait recipe

Passion fruit is a key ingredient in this creamy dessert, which, despite its somewhat bizarre look, adds a tastebud-tingling flavour to sweet dishes, while also offering a multitude of great health benefits.

Passion fruit is packed with vitamins A and C, making it a great antioxidant boost, and contains iron, soluble fibre, and even alkaloids – which have mild sedative properties to help you feel calmer – making this dessert a great option if you’re feeling a bit stressed.

Ingredients (serves 2)

250ml Alpro Coconut Cuisine 

4 passion fruits

1 vanilla pod (split in half and seeds removed)

3 egg yolks

1tbsp cornflower

2tbsp maple syrup

½ vege-gel

Method

Place the Alpro Coconut Cuisine and vanilla pod seeds in a small saucepan, heat through slowly without allowing to boil.

In a separate bowl whisk the egg yolks with the cornflower and half of the maple syrup. Pour the hot Alpro Coconut Cuisine over the egg yolks, whisking the mixture at the same time before adding back to the pan to heat through until thickened (stirring regularly).

Pour the mixture into a bowl, cover tightly with cling film and place in the fridge until cooled (around 2 hrs).

Remove the pulp and seeds from the passion fruit and push through a sieve. Discard half the seeds and keep the rest to one side. Add the remaining maple syrup and passion fruit seeds and top up with water to make 100ml of liquid.

In a small pan, gently warm the liquid until hot, but don’t allow to boil. Sprinkle over the vege-gel and whisk in quickly. Once dissolved, place in the fridge to cool (around 20 minutes).

Take two glasses and add a layer of the coconut custard to each, top with some of the passion fruit mixture and repeat until all is used.
