Mushroom pâté recipe
A good pâté is a fail-safe healthy snack, smothered on oatcakes, crudités or brown rice cakes this mushroom pâté recipe is moreish
Ingredients
Low-calorie cooking spray
2 shallots, finely chopped
2 garlic cloves, finely chopped
250g mushrooms
1tbsp fresh thyme leaves, plus sprigs to garnish (optional)
Salt and freshly ground black pepper
150g Quark
Method
Spray a large non-stick frying pan with low calorie cooking spray and place over a high heat. Add the shallots and garlic and stir-fry for 5 minutes.
Meanwhile, tip the mushrooms into a food processor and blitz. Add the mushrooms to the pan along with the thyme and stir-fry for a further 10 minutes. Season well, remove from the heat and leave to cool slightly.
Clean the food processor, add the mushroom mixture and quark and blend until fairly smooth. Grind over a little black pepper and garnish with thyme sprigs if you like.
Cool and keep in the fridge for up to 3 days and serve with your favourite crudités or crispbreads.
