These Mulberry & Apricot Bars are the perfect snack for helping you power through a workout or your day.
Something I love to do on the weekend is take a little time out of my day to prepare for the week ahead. This often involves making batches of quinoa, lentils and houmous for a lunch on the go, writing a shopping list, and making some supercharged snacks to power me through the busy days ahead.
Preparation is honestly key when it comes to maintaining a healthy lifestyle, and is also vital when it comes to staying energised during a long workout. Training as a ballet dancer the majority of the day (everyday) means I often don’t have any time to pop out to grab a smoothie or snack, so this makes preparation a complete necessity! My latest favourite thing to make are these mulberry & apricot energy bars. This combination is pretty otherworldly: sweet, delicious, and packed with nutritious ingredients. I love doubling the batch and freezing them so I always have something to snack on.
Ingredients
1 cup dried apricots (unsulphered)
½ cup dried mulberries
2 cups cashew nuts
½ tsp fresh ginger
Optional
2tsp baobab powder
*Note: You can make these bars using a combination of apricots with any other dried fruit, so don’t feel restricted to mulberries! Experiment away!
Method
Start by pulsing the cashews until you have small chunks (but not a flour). Add all the other ingredients and continue to blend. After a few minutes, once everything is combined and sticks together, you can stop the blender. Take out the raw mixture and mould into energy bars. Store in an air tight container.
