Malaysian curry prawns with coconut rice

Chock-full of healthy ingredients, Joe’s amazing recipe gives you mangetout, garlic, mixed peppers and red chilli, plus protein-packed prawns for a dish that will keep your taste buds and your tummy happy.

It’s an easy-peasy dish to whip up for a dinner party with friends – you can stick the rice on when they get there, then pop into the kitchen for five minutes to do the rest. So you won’t miss out on any of the gossip!

It’s also the perfect post-gym dinner, as it needs very little prep – the rice can cook while you shower and the rest takes five minutes. No hassle, no fuss and a great post-workout protein hit.

 

1. Boil jasmine rice and add 50ml of coconut milk and some basil

2. Fry garlic and chilli in coconut oil

3. Add prawns

4. Add mixed peppers and mangetout beans

5. Add coconut milk

6. Add Malaysian curry paste
